All vegetables packed in water or oil should be kept
covered with the liquid to keep from drying out.
Vegetables packed in oil may be kept in a cool
cabinet or refrigerated. If kept in the refrigerator, oil
will solidify, but flavor of product will not change. If
serving refrigerated products as antipasti, simplybring to
room temperature before serving.

Sun Dried
Tomatoes (Pomodori Secchi)
Locally grown tomatoes are salted and dried in the sun
on racks for 2-3 days and then packed in our own extra
virgin olive oil seasoned with pepper and our home grown
basil. Sun Dried Tomatoes are all natural, and great as
antipasti or served over pasta, added to sauces or served
with meat or vegetable dishes. Our Sun Dried Tomatoes are a
favorite of the local Americans and sell out quickly.

Tomato Paste (Estratto)
We use approximately 20 kg of tomatoes for 1 kg
of puree. This is a wonderfully rich and flavorful product.
Sun dried tomatoes are pureed with olive oil, basil and
pepper. Use in any recipe calling for tomato paste or make a
delicious tomato sauce by thinning the paste with water,
heat and serve over pasta.

Tomato Puree (Passata)
Only locally grown whole tomatoes are used in our Puree.
Contains only tomatoes, salt and basil and can be used in
any recipe calling for tomato puree. Add your own spices,
garlic, onions and/or meat. Simmer over low heat for 30
minutes to one hour and pour over Pasta.

Tomato Sauce (ready to serve)
Particularly popular with our American friends. We've done
all the work for you. Seasoned with salt, pepper, basil,
garlic, and onion and slow cooked to perfection. Open a jar
and serve with bruschetta, on homemade pizza or heat and
serve over pasta.
